Oatmeal Chocolate Chip granola

Oatmeal Chocolate Chip granola.
 
Yes, it is sugar free and very low in the fat department.

The Chocolate Chips are Carob pieces about 3/4 of a cup. More if you like more. Or preferably, Get Sugar Free Chocolate and break it into pieces for your "chips"
 
No flour here. If you have a food processor grind up 2 cups of Oatmeal. This makes up a flour type of item but is not flour. If no food processor, just get Oat flour. Health food department in most groceries have it. If not, the nearest health food type of grocery.
 
Next 3/4 cup of Splenda Brown Sugar type of mix and 1/2 teaspoon of baking soda. If you can not find the Splenda Brown Sugar, Sweet and low makes the stuff also.
 
Mix all dry ingredients together.
Next comes 2 eggs beaten when put into the mix after combining 2 sticks or 1/2 cup of butter (the extent of the fat) If you want also can put a bit of peanut butter in it. Not a lot because it can make the mix runny.
 
After all of this is put together put in at least 1 cup of Regular Oatmeal, none of the quick cooking stuff-ok.
 
Bake all of this for 9-12 minutes depending on ovens at 350 degrees. At least until the bottoms are brown. The granola will seem a little soft at first but does firm up.
 
Hope you like it. This makes around 4 dozen cookie type of pieces.

BUBBA's BLACK BEAN DIP

BUBBA's BLACK BEAN DIP

One can Black Beans 15.25 ounces
Two containers of diced onions and red peppers (in the pre made salad department- weighs 5 ounces each)

Quite simple-
In a disposable Tupperware, Add the ENTIRE CAN of Beans-juice and all to two containers of diced peppers and onions. Stir together.

Let Mix. Refrigerate.

Perfect to serve on a cracker, tortilla chip or potatoe chip. We even used it as a "Salsa" on the School Marm's grilled chicken.

Any leftovers- GREAT! Just refrigerate and it tastes even better the next night as all the flavors meld together.

11.25 ounce beans
10 ounces peppers and onion

21.25 ounces

Beans- 385 calories
Peppers and onions- none listed, but we'll say 115 to make the math easy.
Total- 500 calories for probably 10 or more servings.

So, 50 calories per serving. (enough for 10 chips worth).

The chips will probably have more calories than the dip.

One of the things that worries me about the new life with my LapBand is COOKING. I LOVE TO COOK. Yes ladies, a heterosexual male that loves to cook. One hundred pounds from now you can start lining up for dinner!

I've gotten quite a few tips from Bubba on how to make tasty low calorie foods, and the Ladies of Deaconess are beginning to provide me some too.

So, this blog will be the recipes I get, use, and enjoy. If I don't enjoy it, but any banded friend likes it, I'll put it out there with a disclaimer.

Now, unlike Miss Cutie Pie and our Deaconess Dieticionist, I am not a licensed anything. Any info I put on here will hopefully be correct, but if I say it has X whatevers, I either got it off the packages or out of a book.

I will try to note the serving size by ounce or portions of a cup. That will be pretty standard throughout.
