Salmon Croquettes

Salmon Croquettes

This Recipe will make 9 - 2 ounce Salmon Croquettes.

Ingredients / Calories/ Protein

1 can Salmon 14.75 ounces / 560 / 84

1 Egg / 80 / 7

12 Club Crackers / 210  / 3

2 Tablespoons Crisco

In a bowl crush the ENTIRE CAN of Salmon

Add Egg

Add Crushed Crackers, 4 at a time. (If you wish to have more fun with your food, add 10 - 20 Goldfish for the last 1-2 crackers)

With your hands, form the first three ingredients into TWO-OUNCE PATTIES, using your food scale.

Place two Tablespoons Crisco in Frying Pan.

Place the Croquettes in frying pan, frying on each side for approximately 5 minutes.

Remove and Place on a Plate with Paper Towels. Pat dry to remove as much of the Crisco as possible. I try to use as little Crisco as possible, but anything below two tablespoons just seems to burn and separate the croquettes.

Rounding up, assuming that you get a few calories from the Crisco yields each croquette to have 100 calories and 10.5 grams of protein.

 

In the Pre Band Days, this would make me two meals of 4 or 5 croquettes, with a serving of Peas and a large side of Kraft Macaroni with Cheese. The Added Goldfish help take away my Macaroni desires. Now the meal is two Croquettes and I still love this with a serving of Green Peas.

1 6" Corn Tortilla 65 calories

1 Tablespoon Shredded Cheese 15 Calories 2 grams protein

  1. Tablespoons Bubba’s Black Bean Dip 15 Calories 2 grams protein

Total 95 Calories 4 grams protein

 

Being a connoisseur of leftovers, I took all of the above ingredients from Monday night’s dinner to make a VERY Filling Sunday Afternoon snack.

To create this you need leftover Bubba’s Black Bean Dip, a SCALE and a TOASTER.

Place the Tortilla on the scale

Place One Tablespoon Cheese on the tortilla

Place up to Two Tablespoons of Bubba’s Black Bean

Keep adding BBB until you get to a total of TWO OUNCES.

Spread the BBB and Cheese out evenly up to 1 " from edge.

Toast the now covered tortilla until the cheese is melted.

Roll into a Burrito.

Enjoy.

For a full meal, make two BubbaRitos, add a spoonful of Salsa and perhaps a spoonful of Sour Cream. Mighty tasty.
