    GOT ANY PLANS FOR THIS SATURDAY NIGHT- June 26, 2010?
    YOU DO NOW! 

    You are cordially invited to JC's MS 150 PARTY 2010 - a fundraiser for Multiple Sclerosis.

    Where: 2118 Simbury Court, Cincinnati OH 45224

    When: 8:00 to ????   (In respect to my neighbors, most of which will be in my back yard, the music stops before midnight)

    Why: Because I am riding the MS 150 the weekend of August 28 and 29.

    Instead of individually going around and pestering folks for donations everywhere I go, I simply hold a party in my backyard. My cheerful and efficient fund raising staff will smile and gladly take your donation and direct you to all the fun in the back yard. Easy and simple. Of course, one or two individuals will refuse, then the rest of us get to watch my cheerful and effective collection staff chase the non donating individuals around all night with a flashlight saying "DID YOU PLEDGE? DID YOU PAY?" (And trust me there is always at least one cheap skate). It makes for a fun evening.

Splenda Pecan Pie Tarts

Tomorrow night we are having a "Holiday" get together for all of the patients of Dr. C. I took my Splenda Chess Pie Recipe, added Pecans to it and converted it to smaller servings- Tart sized.
 

Splenda Pecan Pie Tarts

Ingredients: Calories/Protein:

One Stick Butter 800 / 0

One Cup Splenda 0

3 Eggs 240 / 21

I/3 Can Sweetened Condensed Milk 430 / 10

One teaspoon Vanilla

Cinnamon

Nutmeg

TWO Pillsbury Pie Crusts 1280 / 16

 48 Pecan halfs 240 / 48

Preheat oven to 325 degrees

Mix Butter and Splenda in mixer till creamy

Add Eggs

Add Condensed Milk

Add Vanilla

Add Cinnamon and Nutmeg

Then whip this to a FROTH. This froth makes the top turn a golden toasty brown when baking. The more frothy, the better.

Place ONE PECAN in each premade pie crust that you have formed into little tarts.

Pour THREE TABLESPOONS of the pie mixture into the tarts, over the pecan.

Bake at 325 25-30 minutes. Splenda seems to cook faster than sugar, so check the pie every few minutes after 25.

Splenda Pumpkin Pie

Splenda Pumpkin Pie

Ingredients: Calories: Protein:

1 can 15 oz Pumpkin 140 / 7

¾ cup Splenda 0 / 0

1/3 cup Splenda Brown Sugar 320 / 0

4 teaspoons Pumpkin Pie Spice 40 / 0

½ teaspoon Salt 0 / 0

1/8 teaspoon Ground Cloves 5 / 0

3 Eggs, lightly beaten 240 / 21

1 teaspoon Vanilla Extract 10 / 0

¾ Cup Heavy Whipping Cream 600 / 0

Optional:

1/8 teaspoon Ground Cinnamon

1/8 teaspoon Ground Nutmeg

Pillsbury Pie Crust 640 / 8

Total for 8 slices 1,995 / 36

 

DIRECTIONS

  1. PREHEAT oven to 375 degrees F.
  2. Place Premade Pie Crust in a glass pie plate
  3. Stir together the pumpkin and the next 5 ingredients until blended. Add eggs and vanilla until blended. WHIP the filling until it is frothy and filled with air. The more frothy, the better.
  4. Pour the filling into the premade pie crust (remember to be sure to have it’s aluminum pie plate be sitting in a glass pie plate, as this will make it bake more even and keep it from cracking when you remove it from the oven.
  5. Optional: Dust the frothy top with Ground Cinnamon and Ground Nutmeg.
  6. BAKE for 50 to 60 minutes or until set in the center. Cool completely on a wire rack. Splenda seems to cook faster than sugar, so check the pie every 5 minutes after 50. Please note that Splenda makes the baking pie very fluffy and it will rise to an extremely alarming height. Be not afraid. The pie filling will settle to the normal pie dimensions and a more typical depth as the pie cools. (Hence another reason for the glass pie plate, as it helps keep the pie from shaking as you remove it from the oven.

Meatloaf

Meat Loaf

TWELVE INDIVIDUAL MEATLOAFS are prepared In a Cupcake/Muffin Tin.

Ingredients:    Calories/Protein:

1 ½ pounds Ground Chuck 1880 / 195

1 Cup Quaker Quick Oats 300 / 10

2 Eggs 160 / 14

I Cup Milk 120 / 8

¼ cup Chopped Onion 72

2 ½ Tablespoons Salt 0

3 Tablespoons Ketchup 120

 

Preheat oven to 375 degrees

Using a spray- lightly grease the Cupcake/Muffin Tin

MIX ALL THE INGREDIENTS (except ketchup) BY HAND. Take your rings off and just continue mushing this all together until the consistency is the same. For a little more kick, add a shot of Bourbon (96 calories / 12 = 8 calories per meatloaf.)

Using your Food Scale, measure out 3 ounces. REPEAT 11 times.

You may have a little left over, if so, divide evenly. If you are a little short, take some out of the previous 11. (Keeping all 12 the same size will make them all the same degree of "doneness".)

When all 12 are in their tin, add ¼ Tablespoon Ketchup to the top of each (Decorative AND Tasty). Or try your favorite BBQ Sauce for more oomph.

Bake for 45-60 minutes, until centers are just light pink. (this allows you to finish a frozen one off in a microwave later and not BURN your meatloaf)

When the 45-60 minute baking period is done, REMOVE all 12 from the tin and place on Paper Towels to remove any excess grease.

Goes great with Mashed Potatoes and Lima Beans.

12 individual Meatloafs= 220 calories each. 18.25 grams of Protein each.
